Hua Ting Restaurant @ Orchard Hotel Singapore

I visit Hua Ting at Orchard Hotel with my family for dinner recently. This was to clear the vouchers I had with their dining program, Ala Carte Club before they expire. Hua Ting pride themself as a top Cantonese Restaurant in Singapore offering a delectable fine dining experience to its guests. It is headed by Hong Kong Masterchef Lap Fai.

Be sure to make your reservations in advance, especially during weekends as it tends to be busy. I made my reservation for a weekday dinner and the restaurant is full too. Upon seated, we were served our individual appetisers which is a refreshing chilled peeled baby tomato with lemon jello and sesame dressing. We had Xiang Pian (香片)chinese tea.

We started our dinner with the Truffle Marinated Duck Wings ($15), the Hua Ting Signature Platter of Roasted Duck, Roasted Pork and Drunken French Chicken ($40) and their highly recommended Charcoal-grilled Spanish Iberico Pork "Char Siew" ($26).

The marinated duck wings is refreshing but it did not had a strong truffle taste. The Drunken French Chicken is good, succulent, juicy and had a nice aroma of chinese wine to it. The Roasted Duck is not gamey, its juicy and skin is crunchy. The Roasted Pork as a tad old, a little dry, and skin was a mixture of crispy/hard.

The Char Siew, which is highly recommended is the bomb. I don't like my char siew fatty and this char siew is very lean, but is flavourful, had a nice char crust to it, a little on the sweet side, but very very good.

After our appetizers, we order the Crispy Sweet Corn Pancake with Sea Perch ($28), Charcoal-grilled Lamb Rack ($28 per serving), and the recommended Assorted Vegetables and Crysal Vermicelli claypot ($24).

The Sea Perch is a deep sea, wild Sea Perch, the batter is light, the fish is flaky, juicy and is sweet. As you sink into the crispy sweet corn pancake, it is an undescribable feel. A masterdish. This is one dish that I would order, every single time that I return to Hua Ting.

The Grilled charcoal grilled lamb rack had a nice char to it, is juicy and have a nice little gaminess to the land. Serve on a onion ring with a criss-cross of mint sauce and mustard sauce. We loved it.

The vegetables claypot is done just right. It is light and flavourful, with vegetables cooked to the right texture.

Towards the end of our meal, we had the Seafood Rice Noodles ($38) as our final dish.

The seafood horfun have a good and strong wok hei to it. The accompanying seafood are very fresh, I believe to be of sashimi standard/grade. The prawns were succulent and juicy, the scallops were sweet. Quite well executed.

For desserts, we were served the Crispy Yam Pastry and Chilled Osmanthus Jelly. The Yam Pastry is amazing. Another must order for me when I return. It is light and flaky, with a rich yam filling. Love it!

We had expectations on Hua Ting and definitely it was a great dinner. The Sea Perch was amazing, the Char Siew was great (especially for a lean meat lover) and it ended off with a delectable Yam Pastry. Can't wait to return!
